Delicious_Chicken_Ramen_Soup


This is one of my favorite soups ever! The recipe is from The Wagamama Cookbook which I got it for my last birthday from my lovely partner. I discovered WAGAMAMA restaurants in my first stage of living in London in 2001 and was my cousin Yolanda to introduce me to this new eating experience which i will never forget! 

I DO LOVE Wagamama and now, I can cook the recipes at home! isn´t so niceee?

This is my first recipe from the book and more to come... I wanted to start from something I am great fan and here it is :)



CHICKEN RAMEN SOUP
Chargrilled chicken and noodle soup with pak choi and bamboo
Combine noodles, hot stock, fresh vegetables and lightly grilled chicken and you have a complete meal in a bowl. Fast food really doesn´t get better than this.

2 boneless, skinless chicken breasts
vegetable oil
salt and white pepper (although I used black pepper)
250g (9oz) ramen noodles
1 litre (1 3/4 pints) chicken or vegetable stock (I used chicken stock*)
2 pak choi, trimmed and roughly chopped (or 2 handfuls of baby spinach leaves)
12 pieces menma (canned bamboo shoots), drained
4 spring onions, trimmed and finely sliced

chicken stock* (when you want something to eat now!)
2 good-quality chicken stock cubes - 1 leek, finely chopped - 1 carrot, roughly chopped - 2.5cm (1in) piece of fresh ginger root, roughly chopped - 1 litre (1 3/4 pints) water
Combine all the solid ingredients in a pan, cover with the water, bring to the boil, strain and proceed.
 

1. Preheat the grill or griddle pan. Lightly oil and season the chicken breasts and grill for 4 minutes on each side, or until cooked through. Allow to rest for 5 minutes, slice on the diagonal and set aside.
2. Cook the noodles in a large pan of boiling water for 2-3 minutes until just tender. Drain, refresh under cold running water and divide between 2 bowls.
3. Heat the chicken or vegetable stock until boiling. Put the pak choi on top of the noodles and ladle in the stock. Top with sliced chicken, menma and spring onions.




Esta es una de mis sopas favoritas! La receta es del Libro de Cocina de Wagamama el cual me regaló mi novio mi pasado cumple. Descubrí los restaurantes de WAGAMAMA la primera vez que estuve viviendo en Londres, allá por el 2001 y fue gracias a mi prima Yolanda, que me introdujo en esta nueva experiencia, la cual no olvidaré jamás!

ADORO Wagamama y ahora que tengo el libro, puedo preparar las recetas en casa! No es maravilloso?

Esta es mi primera receta del libro, y muchas más vendrán... Me apetecía empezar por la que más me gusta y aquí está :)

CHICKEN RAMEN SOUP
Filetes de pollo a la plancha y sopa de noodles con pak choi y bamboo
Combina noodles, caldo, verduras frescas y pollo a la plancha y tendrás una comida completa en un sólo plato. La comida rápida nunca fue mejor que ésto.

2 pechugas de pollo
Aceite de girasol
sal y pimienta blanca (aunque yo he usado pimienta negra)
250g (9oz) ramen noodles
1 litro (1 3/4 pints) de caldo de pollo o de verduras (Usé caldo de pollo*)
2 pak choi, cortadas en trozos (o 2 manojos de espinacas baby)
12 trozos de menma (trozos de bamboo en lata), escurridos
4 cebolletas, cotadas en láminas finas

caldo de pollo* (rápido!)
2 cubitos de caldo de pollo  - 1 puerro, laminado - 1 zanahoria, en trozos - 2.5cm (1in) de gengibre, partido en trocitos pequeños - 1 litro (1 3/4 pints) de agua
Combinar todos los ingredientes en una cacerola y ponerlo a hervir, cocer por unos minutos a fuego lento.

 

1. En una sartén poner un poco de aceite de girasol y freir los filetes de pollo a la plancha previamente sazonados con sal y la pimienta. Cocinarlos durante 4 minutos por cada lado. Después retirarlos del fuego, dejar reposar por 5 minutos y después cortarlo diagonalmente y dejarlo a un lado.
2. En una cazuela hervir un poco de agua y cocer los noodles cuando hierva el agua, durante 2-3 minutes hasta que estén tiernos. Escurrirlos, y pasarlos por agua fria. Dividirlos en dos platos o cuencos. 
3. Calentar el caldo de pollo o verduras hasta que hierva. Poner el pak choi (o espinacas) encima de los noodles y añadirlo al caldo. Añadir encima el pollo cortado, el bamboo y la cebolleta laminada.

Grow_your_own

Following yesterday post I wanted to include this one which is kind of the real practice of "Growing your own food" in allotments of in your garden. I doesn´t matter if the space is small or big, or if you have only a terrace, the real purpose is to believe, to try and to make it happen.



Some people are known as being "green hands" which means you are good in growing plants. However, I think all people have this innate ability. What happens is that in my opinion nowadays most people spent great time in front of computers, TV, video consoles, mobile phones, etc... gadgets that alienate us from the real nature and our true roots.

If any one would be available to sew some seeds and to care about that seeds until they open and they become a new being, to nurture, to help and to learn from this developing, I think this world would be a better place. Without any doubt!

I am attracted to nature since I born and in my possibilities I prefer to spend some money and time within and grow my own food. This is always more rewarding, not only economically, but in taste, in feelings and within my inner self.

You should give it a try! There are plenty of resources out there, however, if you really believe, it will happen!!

Siguiendo con el mensaje de ayer, también quería incluir éste el cuál es la práctica real "de cultivar tu propia comida" en huertos alquilados o en tu jardín. No importa si no tienes mucho espacio para ello, incluso un balcón o terraza, el propósito es creer, intentarlo y hacerlo realidad.

A algunas personas se las conocen como una "mano verde" que quiere decir que son capaces de hacer creer plantas. Sin embargo, yo pienso que todo el mundo nace con esta cualidad. Lo que pasa es que hoy en día se pasa mucho más tiempo delante de los ordenadores, TV, video-consolas, teléfonos móbiles, etc... artilugios o aparatos que nos alienan de la naturaleza y de nuestras propias raices.

Si alguien dispusiera un poco de tiempo disponible y plantara algunas semillas hasta que se van abriendo y se convierten en un nuevo ser vivo, para cuidarlo y ayudarlo en su desarrollo, pienso que este mundo sería un lugar mejor. Sin ninguna duda!

Me gusta la naturaleza desde que nací y en mi posibilidad prefiero gastarme un poco de dinero y tiempo en cultivar mis propias verduras y frutas y plantas. Es mucho más gratificante, no sólo económicamente, también en el sabor, y en los sentimientos cuándo ves abrirse una semilla y brotar una pequeña plantita.

 Deberías intentarlo! Hay muchos recursos ahi fuera, sin embargo, si crees en ello, ocurrirá!!

Allotments

One of the most interesting things I discovered while living in UK is the power and social culture behind growing your own food. Most of the people who have strong idea in "growing their owns" have in their gardens an space to cultivate any kid of vegetables and fruits. However, there are other sites around the villages and cities where it is allocate for this purpose. These are well known as "Allotments" and it is basically a plot of land which can be rented by an individual for growing fruit and vegetables, for personal and family use. 

Allotment plots come in many different shapes and sizes, usually depending on the history of the area and the amount of demand for allotments locally. If you interested, you have to contact your local council and register for a plot in the allotment you might like to be. There are 15 allotment sites throughout Stevenage, providing over 600 plots for residents of Stevenage to rent. We did applied before Christmas last year and we are still in the queue awaiting for our right time. We did pass to be in 13th position to be in 5th, in only 4 months. Depending on the site there is more movement and activities, as well as benefits. 

 There is a great community created around this activity and taking on an allotment plot is not all hard work; it can have many advantages, providing fresh home grown vegetables, fruit and flowers for you and your family, free from artificial additives and at a fraction of that you would have expected to pay in a supermarket or greengrocer.

There is also the social side, meeting new friends with similar interests and enabling you to enjoy a healthy outdoor life with gentle exercise and a place to relax and unwind. Allotments are significant to our green spaces and provide habitats for many forms of wildlife.

Una de las cosas más interesantes que he descubierto viviendo en UK es la cultura que hay detrás de cultivar tus propias verduras y frutas. Hay muchas personas que creen en esta idea y que tienen un espacio reservado en sus jardines para el cultivo de los mismos. Sin embargo, existen otros lugares para ello que se conocen como "Huerto Alquilado" y que es un terreno/parcela que se alquila de forma individual para cultivar frutas y verduras, para uso personal y/o familiar.

Estos huertos son de diferentes tamaños y formas porque a menudo  dependen de la historia de la zona y de su demanda. Si estás interesado, lo mejor es contactar con el ayuntamiento de tu zona y registrarte. En Stevenage existen 15 parcelas diferentes, en las cuales hay más de 600 huertos para alquilar por los residentes de la zona. Nosotros nos registramos las navidades pasadas y hemos pasado de la 13ª a la 5ª posición en sólo 4 meses. Dependiendo de la zona, hay distintas ayudas y beneficios, al igual que actividades sociales.

Hay una gran comunidad alrededor de esta práctica y no requiere un trabajo duro; además de posser muchas ventajas, proveen verduras y frutas frescas, flores, que tú y tu familia podéis disfrutar, libre de aditivos artificiales y mucho más barato que lo que pagas en un supermercado.

También hay un lado social en ello, y es que se conoce personas nuevas, con los mismo intereses y que te hacen disfrutar de un entorno al aire libre con un ejercicio moderado y un lugar para relajarse. Estos "Huestos alquilados" son bastante importantes para crear espacios verdes y proveer de un espacio también para el mundo animal.

Judy´s_Vintage_Fair

Yesterday I had an interesting day, I went to Cambridge to meet up with a couple of friends and to go altogether to Judy´s Vintage Fair! One of the UK´s largest and most affordable vintage fair. What a great adventure into the past closets ;) As we were browsing the rails full of beauties I re-discovered some old patterns from the 70´s that my mum and her friends used to were... a great feeling!

It was all organized in a large council building and over 45 stalls distributed along several rooms. There were young designers and old people all dressed for the occasion, ladieswear, menswear and childrenwear, as well as accessory... Vintage, Retro and re-worked, clothes & homewares from 1920´s to 1980s.

The entrance fee it was £2 which is affordable and there were items from £5 upto £35, beautiful clothes, leather bags, shoes, vintage records, necklaces, brooches, keys and even a small coffee shop with delicious cupcakes and handmade cakes... a paradise for the senses.

Ayer fue un día interesante, me fuí a Cambridge a pasar el día y a encontrarme con un par de amigas para ir juntas a una Feria de Vintage! Una de las más grandes y asequibles Ferias de Vintage en UK. Qué gran aventura a través de los armarios del pasado;) Mientras echábamos un vistazo a los railes llenos de ropas preciosísimas, re-descubrí algunos estampados de los años 70 que mi madre y sus amigas solían vestir... qué momento!!

La feria estaba muy bien organizada en un gran edificio como el ayuntamiento y los más de 45 puestos estaban distribuidos por las distintas salas. Había jóvenes diseñadores y gente mayor, todos vestidos y caracterizados para la ocasión... Ropa de mujer, de hombre, de niños y también accesorios... Vintage, retro y re-diseñado. Prendas y accesorios para la casa de los años 20 hasta los 80.

La entrada está bastante bien de precio porque sólo son 2 libras (casi 3 euritos) y había cosas desde 5 hast 35 libras, preciosos vestidos, collares, broches, llaves antiguas, libros, e incluso hasta una cafetería con deliciosos bollitos y tartas caseras... un paraíso para los sentidos.

Recomiendo esta feria porque es una gran experiencia y posiblemente volveré en alguna otra ocasión. En los siguientes enlaces puedes encontrar más información:

Jacket_potatoes

Jacket potatoes are also known as "spuds" and are baked full potatoes and filled with several ingredients such as cheese, mushrooms, onion, baked beans, mince meat, coleslaw, etc...
Since I landed in the UK I had several spuds already, I have them time to time, because are hyper-caloric! however, deliciouuuuussss!
At the beginning of being here I didn´t know what "Jacket potato" means as if I translate directly into Spanish would be like "una patata con chaqueta" which is quite funny! The jacket is the skin, so the potato is baked in the oven with the skin for long times You can also improve the cooking time placing the potato before in the microware and then roasted for 20 minutes in the oven. The cooking time in the microware depends on the size of the potato.
My favorite fillings are butter, cheese and black pepper! accompanied with a nice salad ;) or coleslaw...yamiiiii
And I have a couple of places which I love to go, especially to eat this beauties:
One is in Stevenage, in the Oval café and other is in Peterborough, in the Spud caravan.
Whenever you travel to UK I recommend you to try a spud,  it is something that belongs to the British Culture.


Las "Jacket potatoes" se conocen también como "spuds" Y son patatas enteras asadas y rellenas con distintos ingredientes, entre los más comunes están el queso, champiñones, cebolla, judías con tomate, carne picada, ensalada de col, etc...
Ya las he comido varias veces desde que llegué a UK, aunque de vez en cuando, poque son hiper-calóricas! sin embargo, delicioooooosas! Al principio no sabía muy bien cómo traducir "jacket potatoes" ya que si lo traduzco literalmente sería como "una patata con chaqueta" lo cual es bastante divertido! La chaqueta es la piel, y la patata se asa en el horno con piel y todo por largo tiempo, así que es mejor cocinarlas primero en el micro-ondas y después asarlas en el horno por 20 minutos aprox. todos los tiempos varían según el tamaño de las patatas.
Mi relleno favorito es mantequilla, queso y pimienta negra! acompañada de ensalada o ensalada de col.... riquísimas!!!
Tengo dos lugares favoritos a los que me gusta ir a tomar "jacket potatoes" uno es en Stevenage en el Oval café y otro en Peterborough, en la Spud caravan.
Si vienes a UK, te recomiendo pobrar una "spud", es algo que pertenece a la cultura inglesa ;)

Soldier_Eggs


Last Saturday we went to a local Farm market and bought a couple of beautiful goose eggs, expensive if you buy them every day, but delicious is you do time to time. 
As I recently discovered the pleasure of "Soldier_Eggs" or "Eggs and Soldiers", I know that here in England many people take them for breakfast and also can be the lunch for kids as they just love them.

We normally place the eggs in boiling water, being helped with a spoon to do not crack the egg into the water. The cooking time varies from soft-boiled vs. hard-boiled. If you like a soft yolk, plenty to dip your bread in it, you need to cook it for 1-4 minutes, instead if you prefer it more hard, you need at least 15 minutes, however, you will minimize the amount of yolk and no much left for dipping!
For a goose eggs, we normally cook  them for 7-9 minute. 

We normally take our "soldiers", pieces of bread cut in rectangular shape and with the spread of butter and marmite it together. Just a bit of marmite because it is very strong but very healthy!

So when the eggs are boiled, take them from the pan with the spoon and place them in the eggcup. With a little spoon, crack the shell of the egg on the top and open it. Peel some of the shell-skin around the top and start dipping some of your soldiers into the soft yolk....mmmm it is delicious!
Normally you dip all your bread into the yolk until it is finished and then you eat the rest of the egg-white with the spoon.

It is a simple dish, very popular and very healthy! However, not for everyday as it is bad for your cholesterol.
PS. I found another variation for the "soldiers" in which instead of using bread, they did it with green asparagus rolled in thin parma ham and roasted in the oven. I did not try it yet but sooon ;)



















El pasado sábado fuimos a un mercado local y compramos un par de huevos de ganso, los cuales son caros si los compras todos los días, pero de vez en cuando es una exquisitez.

Como recientemente he descubierto el sencillo placer de los "Soldier Eggs" (huevos pasados por agua) que aquí en Inglaterra la mayoría de las personas lo toman para el desyuno pero que también es el almuerzo de los niños que les encantan!

Normalmente ponemos los huevos en agua hirviendo, ayudados de una cuchara para que al echarlos no se rompan. El tiempo varía según los gustos, normalmente para que tenga yema y se pueda mojar bien, se necesitan 4 minutos, y si te gustan más hechos, como 15 minutos, aunque estará muy hehco y la yema no se podrá mojar bien. Para los huevos de ganso, el tiempo de cocción es de 7-9 minutos aprox.

Para los "soldiers" se utilizan trozos alargados de pan fresco o pan de molde, untados con un poco de mantequilla y de Marmite, sólo un poco de ésto porqye es muy fuerte en sabor pero muy sano!!

Cuando los huevos están cocidos se sacan con la misma cuchara y se ponen cuidadosamente en los "eggcups" (tacitas para los huevos). Con una cucharita se rompe la parte de arriba del huevo y se abre. Pelamos alrededor de esta abertura y a mojar los trozos de pan...mmmmm está delicioso! Se unta el resto del pan en la yema hasta que se termina y después te comes el resto de la clara con la cucharilla.

Es un plato sencillo, muy popular y muy sano! Aunque no para todos los días... cuidado con el colesterol ;)
PD. Otra variación para los "soldiers" que encontré en un libro de cocina es espárragos verdes enrrollados en jamón serrano y asados al horno, sólo un poquito para que estén crujientes. No lo he probado todavía, pero muy proooontooo.

Spanish_Omelet

Yesterday, my friend Susan sent me a message asking for my delicious Spanish omelet recipe. So I thought in sharing with you because it is very popular in UK, all my friends always ask me to cook it, especially for parties... WHAT AN HONOR!

Ingredients (Per 4-6 people):
- 3/4 big potatoes = 1Kg aprox. (peeled and sliced, not too thin, like 0.5cm thick)
- 1 big onion (peeled and sliced)
-  4/5 eggs (whisked)
- salt, black pepper and olive oil

How-to do it:
1. In a big pan (27-28 cms diameter and 5cm depth) put some olive oil (2cm of 5) and heat it.
2. Meanwhile the oil is getting hot, peel and slice the potatoes and the onions apart from one to another.
3. When the oil is hot, add the potatoes (not yet the onions) and cook them in medium fire, they need to be cook but to fried. For cook, i mean get soft and golden brown, not crispy as when you do fries.
4. After some minutes (5min maybe) add the sliced onion to the potatoes and cooked them together. The onions are added after because they cook faster.

 5. Meanwhile, whisk the eggs in a big bowl and when the potatoes+onions are soft (but not too soft), switch off the fire and take them from the frying pan with a slotted spoon draining the oil and add them to the eggs. Mix all the ingredients together with a fork and seasoned (salt, pepper).


 6. Come back to the pan and put the oil (still hot) in another bowl until it colds down, leaving a remaining trace in the pan. Switch on the fire again, high.

7.  Add the mixture to the pan, helping to shape the omelet in a round perfect shape.
* This time I used a small pan to make a couple of omelets (divided the total mixture in two), one for us, one for Renay, my Yoga teacher, as she has been very kind to me lately. You can either use a big pan or small, as you need.


8. Time to time, shake the pan to see if the mixture more easily (non sticking pan are really a MUST).
9. After some minutes (5-7) turn the omelet wit the help of a flat plate (this should be slightly smaller than the diameter pan).
I normally take the pan aside from the fire and go over the sink, so if there is any drop of oil, mix, will fall there.
10. Place the plate over the mixture and turn the pan holding tight the plate. Then carefully put the omelet back to the frying pan and cook for some other minutes.
You can test if it is cook, by introducing a clean knife into the omelet when it is cooking in the pan, if come backs clean, it is done!!

Street_Pocket_Money

Just by chance sometimes I get the pleasure to find some money in the streets while having a walk, going to the supermarket, etc... As it happens often, I have put aside a jar for the coins and notes that I found so far in UK. It is getting full and probably will be destined to charity or  small expenses.

The dictionary define "pocket money" - the cash for day-to-day spending on incidental expenses. This refers to the money that you hold in your pocket (clothes) to pay little expenses like bread, milk, tea or coffee, bus ticket, etc...

Some days I just find pennies... and, other times, even big notes ;) Lucky, in´ it?
Let´s keep the eyes wide open....LOL

Casualmente a veces tengo el placer de encontrar dinero en la calle mientras me doy un paseo, voy al super, etc... Y como me ocurre a menudo, he decidido ponerlo en un tarro a parte con todas las monedas y billetes que he encontrado hasta ahora. Como empieza a llenarse, pobablemente será destinado a la caridad o pequeños gastos.

La definición de "pocket money" - es el dinero que se gasta uno en pequeños gastos diarios. Y hace referencia al dinero que llevamos en el bolsillo (ropa) para pagar una barra de pan, un café, o el ticket del autobus...

Algunos días me encuentro peniques y otros hasta billetes... afortunada, verdad? Sólo hace falta mantener los ojos bien abiertos...jajajaja
